This isn’t so much a recipe posting as it is a testament to the ease of cooking in foil packets on the ‘ole grill. Sometimes, if I am slow smoking something on my Green Egg, I will fire up my gas grill to cook some sides — usually corn or foil veggie packets. Or I might throw an easy side on my egg to cook before or after the main course.
I remember as a little girl watching my grandma pull roasted new potatoes out of the oven. Just a little butter and salt and they were pure heaven. Potatoes are good eating in any form and one of my favorite (super easy) ways to cook them is like this…
Slice some Yukon Gold potatoes into 1/4-inch slices and spread them on foil.
Drizzle with a bit of olive oil (I used garlic olive oil here) OR dot with pieces of butter.
Sprinkle with some sea (or kosher) salt and ground pepper.
Place another piece of foil on top, roll up each end at least twice, and put your packet on the grill (somewhere in the vicinity of 400 degrees should do it.)
Cook for about 25 minutes for indirect heat (or 15-20 minutes for direct heat), flipping with a big spatula halfway through. Poke it every once in awhile to see if it feels done; I like my potatoes cooked but not burnt. Pull your packet off the grill and carefully open it up.
Serve up alongside the rest of the meal — which you undoubtedly worked much harder to make! You can throw in garlic, sliced onions, paprika, or any other seasoning of your choice to make it your own.
