Brownies Baked on the Big Green Egg

Once you build up a nice set of coals on your smoker (in my case, a Green Egg) you have enough heat to cook a whole meal, not just your BBQ main. In fact, I feel absolutely compelled to use that fire to produce something tasty. After I cooked up my ribs the other night ( a roughly four-hour process) I still had plenty of heat left to bake some brownies for dessert. We were in the mood for some real chocolate goodness, so I tried out a recipe I spotted in Food Network magazine some time ago.

Fudgy Brownies

Set up your smoker for indirect heat at 325 degrees F. Coat a 9-by-13-inch pan with cooking spray. (Alternatively, you can butter and flour your pan.) Melt 2 cups semisweet chocolate chips and 1 stick butter in a saucepan over low heat, stirring. Off the heat, whisk in 3/4 cup each light brown sugar and granulated sugar; cool slightly. Whisk in 4 eggs, one at a time, and 1 teaspoon vanilla. Stir in 1 cup flour and 1/2 teaspoon salt.

Spread in the pan.

Bake 45 minutes or until a toothpick inserted into the center comes out almost clean.

Cool on a rack, then cut into squares.

Ingredient note: the boy highly recommends you use Toll House dark chocolate chips because they produce a richer result. (“It’s more sweeter,” he says.) I love the ease of the recipe and the fact that it can bake away in your BGE while you get on to the important job of eating dinner.

  1. O-M-G!! That is awesome. We were talking about making brownies Sunday while we were at the store getting ribs, but somehow they didn’t make it into the basket. Now I want some of those.
