Back when the hubby was just the boyfriend, I bought him a cookbook called The Joy of Healthy Grilling. I think we tried quite a few of the recipes but there was one that stuck. It became our go-to marinade. We have used it on beef, chicken, and pork. It is the little black dress of marinades — goes with everything. Mostly, we use it when we grill up some meat for fajitas.
Since I had a leftover tri-tip in the freezer, I decided to turn it into weeknight fajita tacos. I always have the ingredients on hand…
So I quickly whisked together 6 minced garlic cloves, 2 tbsp soy sauce, 1 tbsp honey, 1 tsp ground cumin, and 4-6 drops of Tabasco. I let the tri-tip sit in the marinade for about an hour and then threw it on the grill for some searing.
After 3 minutes on each side, I reduced the heat and left it for another 10 minutes or so. A little rest on the counter and it was ready to slice.
