Skillet Peach and Blueberry Upside Down Cake

For dessert the other night, we decided to improvise a little somethin. First, we mixed up a double batch of this Alton Brown recipe for the cake part.


Then I melted a stick of butter in my good old cast iron skillet.


I sprinkled brown sugar on top, scattered some blueberries, and started laying down the peaches.

And poured the batter on top.

Smoothed it out.

Put it over indirect heat on the grill — at 350 degrees for about 30-35 minutes. We pulled it off when it started to look nice and brown on top ย and a toothpick came out clean.

We served it up with some yummy vanilla ice cream.

And entered into a happy food coma. ๐Ÿ™‚
